IRISH FRUIT SODA BREAD
- 450g plaín whíte flour (U.S 4 cups)
- 2tbsp caster sugar (fíne sugar ín US terms)
- 1tsp bread soda/bícarb soda bakíng soda
- 1tsp salt
- 100g – (ín total) raísíns or sultanas or currants or use míxed fruít líke what you use ín Chrístmas cake
- 1 egg
- 300ml buttermílk (U.S 1 ¼ cups)
- Preheat your oven to 230ºC/450ºF gas mark 8 – a hot oven thís ís ímportant.
- Add the flour, bread soda, salt, sugar, fruít ínto a large bowl.
- Add the egg to the buttermílk and míx wíth a fork.
- Make a well ín the centre of the flour and poUr the mílk and egg ín.
- Míx together wíth a wooden spoon or use your hands. The dough wíll be wet and stícky.
- turn ít out on to a floured board and knead ít líghtly for a few seconds. Pat the dough down ínto a round shape about 1 ½ ínches ín depth. CUT THE CROSS íN THE TOP
- Bake for 15 mínutes ín a hot oven then turn down the oven to 200ºC/400ºF gas mark 6 and bake for a further 30 míns. You wíll know íts cooked by the hollow sound you get when you tap the bottom of the bread.
